| Visitor Comments: On our recent visit to Vieques our group decided to try Waldo's cuisine. We had a total of 13 in our group with a mix of adults, teens and children. Waldo prepared burgers, chicken pinchos, and seafood pallea. He also brought out his kayaks for us to use. The food was delicious, the kids and adults loved the kayaks and Waldo and his wife were wonderful. Our favorite was the pallea!! We own a house on the island and plan on making a meal with Waldo a regular part of our visits to Vieques. |

Visitor Comments:  Compliments to the chef! The food was wonderful! The salad, the Chicken Paella, as well as the dessert. We could not have asked for anything better! They provide very friendly service and the food was wonderful! I would suggest them to anyone in the future. My sister, who got married on vieques, had them serve a meal on Sun Bay. We were able to have fun in the sun on the beach while the chef prepared a delicious meal. |

| Visitor Comments: After a long day of travel, 12 of us (6 kids and 6 adults) were delighted to have a casual meal (paella) prepared for us at our hotel. We were so pleased to have a relaxed and fun evening being entertained by Waldo's stories. It was a perfect begining to our vacation. Oh my, the coconut flan was outstanding... nothing left. Could we top it? Yes. A few days later we met Waldo at the beach (blue beach) for a fabulous grilled lunch. The kayaks he brought for our teenagers kept them entertained for hours. We will definitely see Waldo again when we make it back to the island. |

Visitor Comments: Waldo, you are absolutely amazing. The lunch you prepared for Elena and Jochen's party was fantastic. I can say that every single thing I tasted that day was delicious.
I especially liked the salad dressing the one with the passion fruit concentrate. Are you allowed to share that?
Will definitely get in touch if I go to Vieques again. Thanks again for taking such good care of us that day.

Waldo is AMAZING!!!!!
You really made the beach party a blast!!! I told you we were an eating bunch. Not one poor little shrimp could escape! we left nothing..... we broke a record I suppose??
I polished off the special "sauce" from the coconut flan. It was divine!!!!! I know you can't reveal the recipe but perhaps you can teach me how to make the coconut flan. It wasn't too rich - it was simply delicious!!!!
If you ever need a recommendation, send them my way!!! I will tell everyone how amazing you are and how generous too. My friends told me they saw you at the beach the next day and you were so much fun and so kind. You are a hard worker who knows how to make people have a good time.

| Visitor Comments: Kudos to Waldo who made 27 people happy at our rehearsal BBQ by the sea (Sun Bay). He fed us many tasty grilled kebobs, enjoyed by vegetarians and meat-eaters, and catered to our special dietary needs. He and his assistant were completely charming, and oh my, the dessert.... The coconut flan and gypsy rolls with rum sauce were to die for. Waldo also lit up the night with torches, creating a glowing evening for all. Thanks Waldo!! |

| Visitor Comments: FANTASTIC!! Waldo came to our cottage and cooked for us on the first night of our stay on the island. He served us chicken and rice paella with a green salad. It was "plate lickin-good". He not only gave us knowledge about preparation of the authentic paella he educated us about the "ins and outs" of the island and for that we will always be thankful for. On the 5th day of our stay Waldo cooked a bbq of ribs, corn on the cob, hot dogs, and kabobs. The cilantro butter was "to-die-for". I highly recommend Personal Cuisine to cook for you during your stay on Vieques. Waldo will not only fill your tummy with great food he will fill your hearts with good spirit. |

Our stay was wonderful, relaxing and just perfect. There was only one problem, we did not stay long enough. Waldo is a wonderful host and truly cares about you having a quality experience.
